This was one of my most requested dishes when I cooked for families as a private chef.
Kabocha squash is naturally sweet with a smooth velvety texture, which makes it perfect for making Korean pumpkin porridge (hobakjuk). Sweet rice balls (aka tang yuan in Chinese and Taiwanese cuisine) are typically served with this pumpkin porridge. They add a chewy but soft texture to the dish (like mochi!) and are super easy to make.
